Ok I get what you want. I made some little tests, and you are right.
-Sufaces can't be zipped using their trims, because those trims does not have control points. Zip uses the control points to snap them togheter.
-Surfaces can't be merged on their trims, because the merge can only occur on the opening of the object. Also, the merge must be aligned on the edge of Us or Vs.
What I would recommend is to keep the pulpills as seperate objects, and to make them a bit bigger. The extra pulpill sould enter into the head's geometry. Of course this would leave a seam, so if you're modeling a soft face it would not be adequate. Otherwise, like in the case of an old person, this could make a good fold under the pulpill.
The difficulty of texturing this varies upon the detail you want. Lots of fine details could hide the seam.
