Yes nurbs have uv's they are just stretched over the wohole thing. However that des not preclude you form mapping the uv's you cant just make a linear point field like yu can for polygons. And quite frankly you wouldn't want to either.
Uv cords can allways be pre turbed, clipped or remapped. So in a way you never actually need multiple uv maps. You can do all uveing operations on one map as long as they dont overlap.
