To add some 2.5 cents to the bowl, i'm sure there are studios using all linux, or all unix, but those guys are huge production houses where majority of tools that they use are proprietrary in house programs... ILM and Dreamworks pop into my mind
ILM has the "Rebel Team", who uses all macs running lightwave and AE. The team works under John Knoll(vfx supervisor on the last 3 star wars movies and many other movies). Also ILM has a compositor called "Sabre" which runs all on Sgi and they also run some Inferno/Flame boxes. On top of that most vfx editors are working on macs running Avid Film Composer. Good luck getting those guys to run some archaic editing software on linux(editors that is). Also most texture painters are running photoshop on macs.

(good portion of wine code for Photoshop operability under linux comes from Dreamworks, why bother and write that if you have Win32 around the house?). They might have a Windows machine in the corner somewhere for people to send emails and managers to fire up their power point wisdom to the staff
No, the code did not come from Dreamworks. The guys at Disney Feature Animation paid the guys at Codeweavers to get their software to run Photoshop under linux. DW had nothing to do with it. Also at DW the texture painters and editors and vfx editors are all working on mac's, not linux.
