Build the entire face then delete anyfaces, then find the delete node and animate the selection membership with a expression like this.
setAttr deleteComponent1.deleteComponents -type componentList 1 ("f["+frame+":999999]")
Please note this is a bit bad in form but it works and ita the anoly sane way for a normal iuser whos not villing to amke a node to do the same thing. Dont relly on this trick over in subsequent referenced/imported files you may get a catasthropic failure. If you want to affect the speed connect a custom time node into the expression and animate its time.
PS: not many maya users would actually know you can do this.
PPS: the video didnt go into the most important bit about polygons (well tahts to be expected it would leave so sour a taste to most watchers that youd cry).
