it's nearly impossible to give sound advice without knowing your shooting format, your end format(s), your postproduction gear available and how much resources you can afford to put into it.
but anyway, generally speaking you'll want to use 10bit uncompressed 4:2:2 for SD productions to lay back on digibeta over SDI..
for HD it's a bit more complicated, you could use:
- DVCPRO HD if all you need is a DVCPRO HD master
- 8bit 4:2:2 if you go to HDCAM
- 10bit 4:2:2 or 4:4:4 if you go to HDCAM SR (but if you can afford this kind of gear, you really shouldnt be asking here 
of course make sure that you put the clip into a seq with the proper settings as otherwise you'll have to render again (and loose quality). also make sure you have a fast enough raid if you go for uncompressed masters.
