Just use Polygon/Polygon. You will click on each vertex, and once you except the last one, a new poly will be created.
I recommend making user hot key for this. Vertex,Edge andPolygon.
In case you are new to this, here is how.

The cursor will change to a "graduate" cap. Just click on the menus until you hit the command you want a hot key for. In this case lets try Polygon/Vertex. Once you click a command, a dialog pops up with a view of the keyboard. Just click on the key/keys you want to map to the command. I like to use Shift 1, Shift 2 and Shift 3. for Vertex, Edge and Polygon. In this case you would click shift and 1.
When done with all new hot keys, use Preferences/KeyboardSetup/Save. Then you can retrieve later with Preferences/KeyboardSetup/Load.
Hints:
1. You have some others that are default hot keys. G with do ray casting to select polygons, and Y will let you select polygons with a rectangle.
2. Sometimes it is easiest to see your model in a shaded view with icon mode on. Just hit (Shift + i ) to turn on icon (wireframe overlay
