I have access to Maya Unlimited 3.0 and was wondering if I can create a game using JUST Maya Unlimited 3.0?
sure. haha, well no.
Games usally are interactive.
So you'd probbaly have to code it somewhere .
BUT , people have made goofy robot fighting games in MEL that run in the perspective view. and I saw a tennis game once .
If you mean game models and aniamtion then yes.. a whole game ready to go on your PS2 ? well ,no...... of course not..
Well, you asked the right question at the right time because at the point I'm in at my education, we're studying our game character and scene development (low poly) in Maya.
Having said that, our lectures discuss Maya's role in game development quite heavily.
As it's laid our right now, Maya 3 has some game development capabilities but it's not nearly user friendly enough to justify building an entire world in it...yet.
On March 13 A|W and Microsoft signed an agreement to use Maya as an official tool in XBOX game development. That's pretty big news considering the hype the console is getting and the sheer power it's supposed to push.
That press release, amongst other GDC related A|W material is located at:

Rest assured that Maya's role in game development is going to be discussed heavily at next week's GDC. As it stands now, given this most recent announcement, I wouldn't be surprised to see a "Games" subset in the next major revision of Maya (Maya 4? : )
It sure beats hunting around for LOD settings. : )
Hope this information was useful to you. Thanks for your time.

PS - One more look at your post prompted one more thought from me. In Maya 3 you can create models and worlds, however you will still need someone with game design skill to create an engine and write instructions to make your creations come to life. Maya doesn't have the "Make into Game" button yet. : )
