Has nothing to do with your capturing software that is up to the compression scheme you use. All of the applications ive ever used are all capable of not a single lost bit of information. Which is even technically the best you can qualitywise get. (and I do allways capture lossless)
The main problem is that losless video and sound east up quite a bit of harddisk. Even the very good 1:100 compressing schemes available (google for losseless compressors) create huge files. So the number one quality restriction is your hardware's capabilities not the software's themselves. As the speed of your hard disk/ amount fo memory is one of the more limitting factors. Other than that you can capture as much and as big as you like, only limit is your hardware keeping up with the data amount.
