I am doing an animation involving space ships from learning maya 5 page 278 (this is the book we have been given as part of school). When it asks that I select Display_Component Display_Selection handles I get as far as just Display. Is there any other way of finding the selection handles? I am using maya 8.5. Any help would be much appreciated!

In Maya 8.0 You can find it in Display_Transform Display_Selection Handle!
Chek if in the status line (under the main menu bar) the animation mode in the mode selector (at left) is selectec (other options are modeling, rendering, dynamics etc.). I don't know if this change the display options, but may be yes...
Another hint is that you can use the Find Menu... in the help of the main bar! It helps me a lot to find options that changed place from one version to another
