1- I can't change the camera of a certain pass. Every pass renders using the default camera. How do I go about doing that?

If you open the options for that pass, in the Format tab you have a drop-down menu (labelled Output Camera) that allows you to choose the camera.

And also, is there a way to create a UV projection based on the surfaces selected instead of on an object basis?

Not sure if it's what you're looking for, but if you select several polygons, create a cluster, then do Property > Texture Projection > ..., it should work.
