I don't know if I guess right, but I think you've made your UVs before you did this extrude. When extruding faces, you create new ones, which have no UVs layed out. Maya cannot extrapolate UVs from newly created faces, according to the Uv topology which does exists. So you'll have simply to select those faces where the texture stretches, and lay out the UVs using your favorite projection tool. Hope this makes sense.
