What does patch surface mostly for?

hi all~

what does a patch surface mostly use for? for example, nurbs surface is good for product design since it can use trim command, and polygon can do human/animal model. how about patch surface? does there any command can use on patch and polygon surface to perform trim action like nurbs surface? is boolean an example?
I want to know that, how to create this bicycle wheel with wire inside in softimage?
